I learned this recipe from my father-in-law, who is from Crete. Roast the lamb for as many hours as the number of kilos it weighs. Remember, don’t add oil, butter, mustard, etc. It comes out incredibly juicy and tender. Absolutely melt-in-your-mouth!

Wash the lamb leg thoroughly.

Place the lamb and garlic cloves inside the parchment paper.

Season the lamb well with salt and pepper, then wrap it in the parchment paper.

Tie both ends of the parchment paper with kitchen twine (like a candy wrapper).

Place it in a baking pan to catch any juices.

Bake at 400°F (200°C) for 2 hours.

It’s perfect served with roasted potatoes and a Greek salad!
