Wash and cut the offal in very small pieces. Put some water into a pot, add the offal and let it boil slowly.

Two hours later add the onions, dill, lettuce, rice and oil. Salt and pepper and let it boil for about 30΄ (until the vegetables are well cooked).

Separate the egg yolk from the white. Beat the egg white into a meringue and add 2 tbsp cold water! Add the yolk and beat well. Add the lemon juice and whisking continually add spoonfuls of the food into the mixture so that the egg and lemon sauce heats well. Pour into the pot and stir.

Let it boil for a while and it is ready.
