Boil the giant beans that you have already soaked overnight, for 20 minutes in a pressure cooker or for at least an hour in a normal pot.

Meanwhile, you have already boiled the spinach (or defrosted it if you use frozen spinach) and place it in a small pot with quite a bit of olive oil, the finely chopped onions, the oregano and the finely chopped tomato. Let everything boil together for a little while.

When the giant beans are ready place them in a baking tray, add the spinach on top, mix if you like and adding a little bit of additional olive oil, place it in the oven for about an hour more.

It is great if you crumble a bit of feta cheese on top about twenty minutes before the food is done and place it back in the oven.
