Ingredients

  1. 1onion, chopped
  2. 3tomatoes
  3. 3p0 jalapeño peppers
  4. 4bell peppers
  5. 2 cupdry beans
  6. 3 tbspcrushed garlic
  7. 1 tbspground cumin
  8. 1/2 tspground cloves
  9. 1/2 tbsproasted and crushed chillis de arbol
  10. 1 tspcayenne pepper
  11. 1 tspchili powder
  12. 3bay leaves
  13. 1water
  14. 1 tbspbouillon or vegetable stock concentrate paste (optional)
  15. 12Vegetarian meat substitute crumbles (optional, replaces beef which can be added instead for meat eaters)

Steps

  1. 1

    Place all ingredients except bay leaves in an 8 quart stockpot or crockpot.

  2. 2

    Cover the ingredients with water., 0. qq

  3. 3

    Place bay leaves in a tea strainer or wrap them in cheesecloth tied with a string which is long enough to dangle over the side of the pot.

  4. 4

    Cook on low heat, stirring occasionally, for at least 4 hours or until beans are soft.
