Sauté the artichokes in the oil together with the carrots and the onion.

Season with salt and pepper, add the lemon juice, the dill and as much water as is needed to cover the ingredients.

Simmer until tender for about 1 hour or depending on your cooker.

If you like you can make an egg and lemon sauce by beating one egg yolk with a little lemon juice and adding a bit of the stock to temper it.

When the egg and lemon sauce gets fluffy, stir it into the pot shaking it so it is evenly distributed.

Serve.
