This is an easy and delicious kokkinisto (braised with tomato sauce) calamari, also suitable for fasting!

Sauté the onions and the peppers in the olive oil for a few minutes.

Add the calamari and sauté for an additional 8-10 minutes, stirring.

When all the liquids are absorbed, stir in the wine and continue sautéing until it evaporates.

Add the tomato sauce, salt, pepper, (a little sugar, optionally) and flavor with oregano (and dried basil, if you like it).

Let everything simmer until the calamari gets tender (you might need to add water).

Serve with finely chopped parsley and accompany with rice or pasta.
