I love cannelloni and my husband loves corn, so we combined our tastes...

For the crepes, combine all the ingredients and blend until smooth.

Heat a skillet and add 1 teaspoon of butter or oil. Pour in a little batter and cook for 1 minute on each side.

For the sauce, mix all the ingredients and cook over medium heat, stirring constantly. When it starts to boil, cook for 2 more minutes, then remove from heat and set aside.

For the filling, cut the cheese into small cubes. Blend half the can of corn with the garlic and a little sauce, then mix with the cheese and the remaining corn.

Fill the crepes with the filling, place them in a baking dish, and pour the sauce over the top. Sprinkle with grated cheese.

Bake for 10 minutes or until the cheese is golden and bubbly. Serve hot.
