Air-Fried Vegetarian Sandwich Spring Rolls

I used to make this type of spring roll by deep-frying or pan-frying, but they absorbed a lot of oil, so I stopped making them for a while. Today, I tried using an air fryer. They taste great with rice noodles and you don’t have to worry about them being too oily.

Cooking Instructions

Prepare all the ingredients.

Sandwich bread.

Cut off the crusts from the bread since you’ll need to roll it out thin. Use a rolling pin to flatten the bread and cover with a damp towel until ready to use.

Finely chop all the prepared ingredients and get them ready to mix.

Mix all the ingredients together and let them sit to absorb the flavors before rolling.

How to roll.

Roll the filling in the bread without folding the ends. Use egg yolk mixed with 1 tablespoon cornstarch to seal the edge. Brush a thin layer of oil on the rolls to prevent burning when air frying.

Place the spring rolls in the air fryer at 300°F (150°C) for 10 minutes for the first fry. When ready to eat, air fry again for 3 minutes at 400°F (200°C).

This is my second batch, fried until golden brown.

At first, I air-fried for 5 minutes to reheat, so they turned out even more golden. With the leftover filling, I rolled it in rice paper and it also turned out delicious.
