A fusion indo Chinese recipe of a spicy and hot chilli sauce.
Steps

Firstly, soak dried red chilli in hot water for 20 minutes or till the turn soft.

Discarded the water and blend to smooth past adding water if required keep aside.

Now in a large kadhai, het 1/4cup oil saute 1/4cup garlic and 2tsp ginger for a few minutes.

Add in prepared red chilli paste saute for 3 minutes. So that chilli gets cook well.

Now add 1/4cup water adjust consistency. cover and simmer for 15 minutes. make sure to cook the sauce till oil floats on top.

Add in pepper, vinegar, soya sauce, tomato sauce, sugar and salt to tast. mix well making sure everything is combined well.

Serve schezwan sauce with chips or fries.
