Ingredients

30mins
  • 1large red pepper
  • 1large yellow pepper
  • 100 gcouscous
  • handfulblack olives, chopped
  • 50 gfeta cheese, crumbled
  • handfulcherry tomatoes, quartered
  • 2 tbspshredded basil/herbs

  1. 1

    Heat oven to 190C/370F. Bake the peppers for a few minutes, until almost soft. Place on a baking tray, cut-side up.

  2. 2

    Place the couscous in a bowl and cover with 130ml boiling water. Cover the bowl and leave to stand for 10 mins.

  3. 3

    Stir the couscous with a fork to break it up, then mix in olives, feta, tomatoes and basil.

  4. 4

    Pile the couscous stuffing into the pepper halves and bake for 10 mins.
