Cooking in college doesn't have to be expensive, or time consuming, or unhealthy! Randomly came up with this as I had no pasta sauce, and it turned out to be a pleasant surprise.

Cooking in college doesn't have to be expensive, or time consuming, or unhealthy! Randomly came up with this as I had no pasta sauce, and it turned out to be a pleasant surprise.

Ingredients

30 mins
1 serving
  1. 1 bunchLinguine
  2. 1large carrot
  3. 1 tbspricotta cheese
  4. 1 tspgarlic butter
  5. Dashsalt
  6. 1/2 tspchicken stock (powder)
  7. to tasteGround ginger
  8. Arugula, or any kind of hearty flavoured greens

Cooking Instructions

30 mins
  1. 1

    Put on a saucepan of water to boil first

  2. 2

    Clean, peel, and chop carrots into thick slices.

  3. 3

    Put linguine and carrots into the water and cook on medium heat for about 15 minutes.

  4. 4

    Drain pasta and carrots, and separate out the carrots. Place carrots, ricotta, ground ginger, chicken stock, and garlic butter into a food processor.

  5. 5

    Blend until smooth

  6. 6

    Spoon over pasta and garnish with lots of greens! Enjoy

Great idea for using carrots! I never would have though to make them into a pasta sauce! I can't wait to try :D
