Creamy carrot linguine

Cooking in college doesn't have to be expensive, or time consuming, or unhealthy! Randomly came up with this as I had no pasta sauce, and it turned out to be a pleasant surprise.

Cooking in college doesn't have to be expensive, or time consuming, or unhealthy! Randomly came up with this as I had no pasta sauce, and it turned out to be a pleasant surprise.
Cooking Instructions

Put on a saucepan of water to boil first

Clean, peel, and chop carrots into thick slices.

Put linguine and carrots into the water and cook on medium heat for about 15 minutes.

Drain pasta and carrots, and separate out the carrots. Place carrots, ricotta, ground ginger, chicken stock, and garlic butter into a food processor.

Blend until smooth
- 6
Spoon over pasta and garnish with lots of greens! Enjoy

This is another last-minute dish, whipped up after my wife requested pasta to go with the chicken I was in the middle of preparing for dinner. I didn't have anything at hand that could obviously go into a pasta, such as sausage or herbs, and only had a bottle of passata and a handful of capers in the pantry. So I decided to forgo both altogether and created something new, with a little bit of inspiration from carbonara, and a little bit of inspiration from caccio e pepe.
