Place the chicken in a pot and boil until fully cooked. Remove the chicken and shred the meat. Return the bones to the pot to continue simmering the broth. Add a roasted onion to the broth. In a small pan, sauté crushed shallots and garlic until fragrant, then add to the broth. Season the broth with rock sugar and salt to taste (make it a bit saltier than usual, as it will be diluted when poured over the noodles).

Shred the chicken into bite-sized pieces.

Wash the fresh herbs, bean sprouts, green onions, and cilantro thoroughly. Get everything ready to serve the pho.

Prepare the Nha Trang-style pho noodles. Bring a pot of water to a boil, add a pinch of salt, and briefly blanch the noodles and bean sprouts. Place them in a bowl. Arrange the chicken on top (Rose likes the chicken skin 😂). Ladle the hot broth over, add green onions and cilantro, and sprinkle with a little black pepper!
