A plant-based alternative to traditional tinga. Light and delicious. Perfect as a snack or a main dish.

Sauté the onion in 2 tablespoons of oil until it becomes translucent.

Add the grated carrots and stir for 5 minutes, then remove from heat.

Blend the tomatoes with the tomato puree, chipotle pepper, salt, and one cup of water.

Add the sauce to the carrots and cook on low heat for about 8 minutes or until the liquid evaporates, leaving it slightly saucy.

Serve over a bed of lettuce with corn tortilla chips and refried beans.
