Just learnt yesterday from a good friend how to make chapati...

Cook and mash the pumpkin

Prepare the dough : in a bowl mix the pumpkin, the flour, the salt, the sugar and some oil ; using water, make an elastic and well-moist paste

Cover and leave the dough to rest for 10 min

Roll flat the dough and make a big circle and brush with oil

Cut long piece of the dough

Fold and roll with both hands from the ends to make a rope like shape and make coiled balls

Roll the coiled balls flat and make smaller circular shapes (1 ball = 1 chapati)

Heat a frying pan and fry the chapati on both side (they need to be cooked without browning)

Fry the chapatis again while brushing them with oil to keep them moist...they are ready when both sides are golden brown

Use some foil to keep the chapatis warm while you are frying (you will need to keep them warm to be able to shape them properly before serving)

You can serve the chapatis by folding them in a triangle shape
