Christmas canapes

I've been experimenting with gluten-free canape recipes this month - not because of any wheat allergies, but just out of interest. This one came about because I received loads of beetroots in my weekly seasonal fruit and veg box and decided to boil them all at the same time and then use them in a salad, in a dip and as the base for these canapés. I used home-made pesto sauce

If your beetroot is raw then cook in a big pan with lots of water for a couple of hours.

Drain and let them cool

Get the ingredients together

Peel the beetroot
- 5
Slice the round bit off each side so that all the canapes will have a flat base. Cut each beet into four reasonably thick slices.

Spread some pesto over each slice

Place a slice of turkey breast on top
- 8
Slice the tomatoes and put a slice on top. Use a caper for the finishing touch

Sprinkle with chopped chives and ready to go!
