Ingredients

1 hour
6 to 8 servings
  1. Whites of 6 large eggs
  2. 350 gmscaster sugar
  3. 1 tspwhite wine vinegar
  4. 2 tspcornflower
  5. 500 mlsdouble cream
  6. Variety of soft fruits including: figs, strawberries, raspberries, cherries, blackberries etc. for decoration

Steps

  1. 1

    Whip the egg white to stiff peaks slowly adding the sugar a spoonful at a time.

  2. 2

    Whisk in the vinegar and cornflour.

  3. 3

    Line a baking tray with non stick paper.

  4. 4

    Spoon the meringue onto the paper forming a circle (you can draw this on the paper in advance). Make it higher on the outside with a well in the middle.

  5. 5

    Bake at 150 degrees for an hour. (Check to make sure it doesn't catch.

  6. 6

    Whip cream and pile onto cool cooked meringue.

  7. 7

    Top with a variety of fruits of your choice.

  8. 8

    Serve!
