Heat skillet with canola oil to 250°F

While skillet is heating up, slice chicken in to thin strips (they will get larger as they cook). Mix raw chicken strips with both mild and hot/spicy packets of taco seasoning as well as cayenne. Let sit for approx 5 minutes.

Let chicken cook in skillet completely through, flipping occassionally.

Place in warmed tortillas topped with lettuce. For a healthier open, put chicken directly on lettuce and eat with no dressing. If you want a little balance, Ranch dressing is good on either taco or salad.
