1/2 cupOlive oil

Warm up oil in frying pan

Sautee chopped onions

Add diced potatoes, salt, pepper, and any other desired spices. Let potatoes cook

Beat eggs and add to the pan

Lower to low medium heat

Cover let cook for about 10 minutes

Flip over on a plate then transfer back to pan on the flip side so the top can cook for about 5 mins.

Let sit a couple minutes then serve

i like this dish due to its versatility, you can add any combination of veggies or spices to change the end flavor, tho it doesnt list it add eggs, and finish in the oven if you dont like runnie eggs, also for you guys on the go and dont have time to peel amd cook the potatos try frozen tater tots or fries to speed this up, kids will also ne less scared to try it
