When tender, remove from heat and cover to keep warm

For sauce: melt remaining 1 tbl butter, stir in flower, 1/8 tsp salt and cayenne.

Add milk all at once, cook and stir until thickened. Remove from heat, stir in cheese until melted and keep warm

Make omelets, add part of mushroom mixture, cover with cheese sauce and garnish with mushrooms
