Mix chickpea flour or besan with turmeric and salt.

Add buttermilk, sugar and make thin mixture. It should be thin as if you put spoon in batter and remove it, it should able to bring thin layer of batter. Even more thin will also work.

Now in large wok add table spoon of oil, pour this mixture and reduce it till it become dough and starts seperating from sides.

Now oil flat surface and pour this mixture in it. And with the help of katori spread it evenly on surface. Make sure you spread it as much as possible. Let it get cool down.

Once it cool down cut it with slices and pick one side of it and roll it down to other end on slice. You can make slice shorter to make roll bite size.

Now to make tadka heat oil. Add mustard seeds, curry leaves, coriander, green chilli and hing and fry it. Pour this on rolls. And eat.

Add little bit of sugar in butter milk as it increases taste but its optional.
