Ingredients

1 hour
4 servings
  1. 8boneless chicken thighs
  2. 1large onion, sliced or 2 medium shallots
  3. 250 gramsbutton mushrooms, sliced thickly
  4. 1 clovegarlic, peeled and chopped finely
  5. 2beef tomatoes, deseeded and chopped
  6. 75 mlchicken or beef stock
  7. 75 mldry white wine
  8. 2 tbsptomato puree
  9. 2 tbspcornstarch / cornflour
  10. 1 tspthyme
  11. 1 tspbrown sugar
  12. 1 tsppaprika
  13. 1 dashworcestershire sauce, see my free-from recipe link below
  14. 1oven roasting bag
  15. 1 handfulfinely chopped parsley to garnish
  16. 4 rashersbacon, diced (optional but very tasty!)

Steps

  1. 1

    Preheat the oven to gas 4 / 180C / 350°F

  2. 2

    Put the onion, mushrooms, garlic, tomatoes, bacon and chicken thighs into the roaster bag

  3. 3

    Mix the flour, paprika, sugar and thyme together

  4. 4

    Mix together the wine, the stock, tomato puree and worcestershire sauce

    Add the liquid slowly to the flour mix stirring well to avoid lumps

  6. 6

    Pour into the roaster bag and tie the end off

  7. 7

    Gently shake the bag to coat the chicken well in the sauce

  8. 8

    Put in a roasting tray and cook for 45 - 50 minutes

  9. 9

    Serve with a handful of chopped parsley thrown over and with boiled potatoes or mash, steamed broccoli, carrots, peas etc

  10. 10

    This sauce can also be used for pork and beef
