Ingredients

8 servings
  1. 2 packages6.8 ounces each. Spanish rice and vermicelli mix
  2. 1/4 cupbutter cubed
  3. 1 can14-1/2 ounce diced tomatoes undrained
  4. 4 cupwater
  5. 1 can10oz. diced tomatoes and green chilies UNdrained
  6. 3 cupcubed cooked turkey or chicken
  7. 1 can11 oz. whole kernel corn drained.
  8. 1/2 cupsour cream
  9. 1 cupshredded Mexican cheese blend divided

Cooking Instructions

    in a large skillet saute rice and vermicelli in butter till golden brown. gradually stir in water tomatoes,and contents of rice seasoning packets. bring to a boil reduce heat cover and simmer for 15 to 20 minutes or until race is tender. meanwhile in a large bowl combined the turkey corn sour cream and half of the cheese stir in rice mixture. transfer to greased 3 qt. baking dish.. sprinkle with remaining cheese this will be full. bake uncovered at 375 for 20-25 minutes or until heated through
