Ingredients

1 hour
  • 1onion
  • 1red pepper
  • 1green pepper
  • 1 cancrushed tomato
  • 1 mediumcarrot
  • 2stalks of celery
  • 1 tbspfresh ginger
  • 3 clovegarlic
  • 1/2 tspchipotle chilli powder
  • 2bay leaves
  • 1/2cinnamon stick
  • 2 tsppaprika, ground cumin, coriander
  • 1 tspdried thyme, basil, oregano
  • 1 cupfrozen or fresh corn
  • 1/2 cupminced parsley or cilantro
  • 2 tbspsoy sauce
  • Beans drain and rinse plus add 6 cups of water
  • 3 cankidney and black beans
  • 1 can6 oz tomato paste
  • 2 tbspolive oil
  • 1 cupbulgar or cracked wheat
  • For the jalapeno - halved, seeded, and minced
  • 1jalapeno

Steps

  1. 1

    turn 8-10 qt crackpot on high

  2. 2

    add cooked beans, water, bulgar, tomato paste, bay leaves, and cinnamon stick to the crockpot

  3. 3

    after sauteing the veggies & spices, transfer then to the crockpot

  4. 4

    reduce heat to low, cover and cook 4-6 hrs

  5. 5

    add corn, minced parsley, soy sauce . cook and cover for another 1/2 hr on high heat
