Ingredients

  1. 1/2 cup(3 ounces) semi sweet chocolate chips
  2. 1(14 ounce) can sweetened CONDENSED milk
  3. 1 tspvanilla extract ( I use extra)
  4. 1egg
  5. 1(6 ounce) chocolate crumb pie crust
  6. 1/2 tspmint extract
  7. 1several drops green food coloring
  8. 11 ozcream cheese, softened ( 1 8 ounce package and 1 3 ounce package)

Steps

  1. 1

    Preheat oven to 350°F.

  2. 2

    In small sauce pan, melt chips with 1/3 cup of the condensed milk.

  3. 3

    Stir in vanilla.

  4. 4

    Spread on bottom of pie crust.

  5. 5

    With mixer, beat cream cheese in large bowl until fluffy; gradually beat in remaining condensed milk, mint extract, and green food coloring.

  6. 6

    Add egg; beat on low speed just until combined.

  7. 7

    Place pie crust on baking sheet; place on oven rack.

  8. 8

    Carefully pour mint mixture over chocolate layer in pie crust.

  9. 9

    Bake 25 minutes or until center is nearly set.

  10. 10

    Cool. Chill at least 3 hours.

  11. 11

    Store leftovers covered in refrigerator.

Some of my favorite things are family, friends, my pets, cooking, baking, football (Badger & Packer), Brewer baseball, college basketball, car racing, thrift stores, volunteering, and rummage sales. I have a 9 year old rescue dog, and 7 birds ( 6 are rescue) and they range in age from 1 year to over 19 years old. I volunteer for a dog rescue and a shelter, as well as other festivals and organizations.
