Ingredients

2 servings
  • 1 tspsalt
  • 3 cupall-purpose flour
  • 1 tspbaking soda
  • 3 tspcinnamon
  • 1 tspbaking powder
  • 3eggs
  • 2 cupsugar
  • 2 tspvanilla extract
  • 1 cupvegetable oil
  • 3 cupgrated zucchini
  • 1 cupchopped walnuts (optional)

Steps

  1. 1

    preheat oven to 350°F (175 C)

  2. 2

    sift together flour, salt, cinnamon, & baking powder

  3. 3

    beat eggs. add & mix well sugar, vanilla, & oil. add zucchini to egg mixture.

  4. 4

    add dry ingredients, mix well. stir nuts if desired ( I didn't). pour into 2 ungreased loaf pans.

  5. 5

    bake for 1 hour

  6. 6
