My Grandmother got this recipe from the Methodist Church of Evarts,Ky Cookbook in 1940's. It had been given by Viola Jones and had been in her family for over 100 years. It is the best apple stack cake I've tried and I've tried many.

My Grandmother got this recipe from the Methodist Church of Evarts,Ky Cookbook in 1940's. It had been given by Viola Jones and had been in her family for over 100 years. It is the best apple stack cake I've tried and I've tried many.

In a small bowl combine buttermilk, baking soda, and baking powder

Cream shortening and 2 1/2 cups sugar, then add eggs and vanilla, beat well

Mix two mixtures together and sift in together 4 cups flour and salt. Add extra flour as needed to be able to handle dough.

Divide dough into 7 parts. Roll or pat each into a wax paper lined 9" baking pan for 10 minutes @425°F then let cool.

(If using dried apples, let soak in water over night.) Bake apples in a large covered pan, a roaster pan works well, at 300°F stirring frequently until the apples are mushy and the liquids are held by the apples.

Stir into apples the cinnamon, nutmeg, cloves, and 2 cups sugar.

Spread hot apple mixture on each cake and stack. Let set for at least 24 hrs, preferably in refrigerator.
