Ingredients

  1. 200 gramsbutter,plus extra for greasing
  2. 225 gramsdark brown soft sugar
  3. 1 tspvanilla extract
  4. 25 gramscocoa powder,sifted
  5. 75 gramsself-raising flour,sifted
  6. 3 largeeggs,beaten
  7. 400 gramsgood quality dark choc(50% cocoa solids)

    Pre heat oven 170 C (150C fan oven) gas mark 3

  2. 2

    Line a 20 cm (8inch) baking tin with parchment paper and grease

  3. 3

    Melt chocolate with butter in a heatproof bowl over à pan of gently simmering water until smooth . Remove from heat and allow to cool slightly.

  4. 4

    Mix the sugar, vanilla extract, cocoa powder, flour and eggs. Then pour in melted chocolate and stir.

  5. 5

    Turn the mix into the tin and smooth over with back of spoon. Break up remaining chocolate and sprinkle over top.

  6. 6

    place in centre of oven and cook for around 1 1/4 hours until set to centre on surface but soft underneath. Do not over cook or the soft gooey centre will spoil .

  7. 7

    Leave to cool for 2 hours then turn out onto a chopping board and cut up into slices.serve cold or slightly warm with ice cream
