Ingredients

  1. Pasta
  2. 1 packagespenne rigate pasta, cooked
  3. 1/2 cuplong beans, cut into 1inch pieces
  4. 2 mediumpimento peppers, seeded and sliced
  5. 1 mediumcarrot, stripped and cut into 1 inch pieces
  6. 1/2 cupsliced broccoli floretts
  7. 1/4 cupsliced cauliflower floretts
  8. 1/3 cupcorn
  9. 1 mediumonion, sliced
  10. 1/4 cupbacon, cooked and broken into bite size pieces( optional)
  11. 3 clovegarlic, chopped
  12. 1/2 tbspginger, chopped
  13. 2 tbspcelery, chopped
  14. 1 tspsalt or to taste
  15. 1/2 tbspItalian seasoning
  16. 1 1/2 tbspoil
  17. 1/4 cupvegetable stock/water, or as needed

Cooking Instructions

    heat oil in large skillet. add onion, ginger, garlic, broccoli, carrots, long beans, cauliflower, peppers and salt. cook 1min, add stock/ water, reduce heat, cover and cook for 1min more

    mix in the corn and bacon then fold pasta into vege mixture. sprinkle with Italian seasoning, adjust taste and turn off heat. serve with your favorite pasta sauce or have as a salad
