1/4 cupchopped yellow bell pepper
1/4 cupcilantro finely chopped
1/4 cupcrumbled blue cheese
1salt and pepper to taste
4eggs whites

prepare cilantro, bell pepper add to bowl.

add blue cheese, salt and pepper and stir till evenly mixed

preheat skillet on medium low pour in egg whites cook until they begin to firm . pour in peppers, cilantro, blue cheese mix. fold omelette then flip omelette wait 2 minutes and serve
