Ingredients

2.5 hours
4 servings
  • 1shoulder of lamb
  • 3-4 clovesgarlic (skin on but bashed)
  • 2 sprigsrosemary
  • 10-15small potatoes
  • 1courgette chopped into pieces
  • 3-4tomatoes quartered
  • 1 cupstock or wine
  • 2 tbsolive oil
  • salt and pepper

Steps

2.5 hours
  1. 1

    Place the lamb in a baking tray and surround with the vegetables.

  2. 2

    Add the rosemary and garlic.

  3. 3

    Pour the stock and oil over the meat and vegetables and make sure everything is coated.

  4. 4

    Salt and pepper to taste.

  5. 5

    Cook on a low heat (150degrees) for 2.5 hours. Check towards the end of the cooking time to make sure its not catching.

  6. 6

    You can cover with silver foil if necessary.

  7. 7

    Serve with green beans.
