Chinese-style shrimp balls with shrimp sauce Chinese-style shrimp balls with shrimp sauce
Shrimp balls are from a found recipe, the sauce I improvised. For the shrimp, I'm giving the quantities in the original recipe but I made only a 1/3 batch myself. It's actually fairly involved and I'm honestly not sure it's worth the effort but I did like the results. Jon -

California Farm Shrimp Avocado Egg Rolls California Farm Shrimp Avocado Egg Rolls
Fresh or thawed, peeled, deveined raw shrimp need only four minutes on each side to cook to perfection when wrapped in fresh eggrolls with slivered red onions and avocado, the same time the eggrolls need to become crispy and golden. Fifteen minutes more to make fresh eggroll skins, same time as it takes to heat the grapeseed oil for wok frying, and you can serve a delicious, sophisticated lunch or dinner in half an hour. Here is the recipe. Plump and Firm Shrimp with Ginger Mayonnaise Sauce Plump and Firm Shrimp with Ginger Mayonnaise Sauce
The izakaya my husband goes to a lot serves shrimp-mayonnaise with a sauce that contains a little ginger. I tried it and it was delicious, so I copied it.You just need a tiny bit of garlic. Maybe less than 1 gram is all you need. You need about the same amount of ginger juice too. This 'hidden flavor' is what makes the sauce so good.If you slit the back of the shrimp, they open up and look bigger than in reality.
