I'd been promising my daughter that I would make Clam Linguine. But in a mad rush for a late dinner I realized that didn't have clams, and I didn't have enough linguine... In fact, I didn't have hardly any of the right ingredients...So? I improvised...

This came out so good that it had my kids arguing. Even my picky little one cleaned his plate and went for seconds. They ate whole skillet full in the same night!

Ingredients

  1. 16 ozLinguine or Spaghetti (I used spaghetti)
  2. 1 ozLow sodium bacon bits
  3. 1 lbUncooked, cleaned and deveined shrimp (thawed & drained)
  4. 1 can Condensed cream of mushroom soup
  5. 12 ozwater
  6. 2 tspbutter
  7. 1/2 cup2% milk
  8. 1/2 tsponion powder
  9. 1 tspgarlic powder
  10. 1/2 tspground black pepper
  11. 2 tspItalian Seasoning
  12. 4 ozgrated parmesan cheese

Cooking Instructions

    Boil pasta in 6-8 cups of water until al dente (I like to get my pasta started right away).

    On medium heat, pour soup in a large skillet or pot. Add the water and stir until smooth.

    Add butter and stir in a 1/2 cup of milk until well blended.

    Add onion powder, garlic powder, pepper and Italian seasoning.

    Bring sauce to a slight boil and reduce the heat to low for 5-7 minutes. This will allow the sauce to thicken. Once thickened, add the shrimp.

    Turn the heat just below medium. The sauce will absorb the flavor of the shrimp.

    Once you see the shrimp begin to turn pink, stir in the cheese and reduce the heat to low for 5-10 minutes until the sauce thickens to your preference. Serve with pasta of your choice!
