Ingredients

2 servings
  • 1 smallcan of red salmon , I make sure it is line caught and not from farmed stock.
  • 2tablespoons of best mayonnaise
  • 1 pincheach of dried tarragon and dill
  • 1 pinchblack , fresh cracked pepper
  • 1/2 tspgood balsamic vinegar
  • 1good handful of salad leaves of choice
  • 4 sliceof a dark rye, rustic or artesian bread

Steps

  1. 1

    Drain the can of salmon of all its liquid and tip the fish into a bowl. Remove the bone and , flake the fish

  2. 2

    Add the mayonnaise and the pepper, dill and tarragon, stir then add the vinegar and stir again

  3. 3

    Make tiny lmarble sized little balls with your hand

  4. 4

    Arrange the lettuce on your bread and top with the little fish balls. I do not butter the bread as the mayonnaise is sufficient .

  5. 5

    Alternatively you can spread this onto the bread, or make little lettuce arrangements as starter or finger food for a buffet
