Spanish Omelette (Tortilla de patatas)

Heat the pan

Add some cooking oil

Add onions and stir till almost brown then put in a pinch or two of black pepper and salt

Add the potatoes and peas to the already browned and seasoned onions (it's advisable to relatively boil them beforehand)

Stir and mix the mixture till potatoes and peas are cooked and remove from heat

Place the mixture in a different container

Add the already beaten eggs to the mixture and mix

Once satisfied, using the same pan, turn on the heat and and a bit of cooking oil

Pour part of the mixture and cook at medium heat

Once you notice the top layer is 'thickening' get a large round plate to help turn

You turn by placing the plate on top of the pan, turn the pan upside down return the pan to the firesource and slide the half-cooked Omelette onto the pan to cook the underside

Cook for about 5-7min. It should b e ready to serve
