No Compromise Healthier Roast Potatoes

I tried to find a healthier way to my traditional cooking method for roast potatoes but all of them seemed to alter how they would taste at the end... Leaving the skins on or seasoning them. I wanted to make some that tasted simple and traditional but weren't as unhealthy.
So I combined the tips I found across a bunch of healthy recipes and came up with this one.
The measurements up too for each ingredient are very flexible, just make sure you prepare enough potatoes to go around!
No Compromise Healthier Roast Potatoes

So I combined the tips I found across a bunch of healthy recipes and came up with this one.

Wash and peel potatoes in cold water.

Chop Potatoes into evenly sized pieces and add to a large pan.

Add enough Boiling Water to cover the potatoes and simmer for 10 minutes. Turn the oven to 180°C to preheat.

Drain Potatoes and return them to the pan, off the heat.

Sprinkle the flour over the potatoes.

Place a lid or large plate on the pan.

Carefully shake the Potatoes in the pan, while keeping the lid on. Use a tea towel to hold it on if hot. This should fluff up the edges of the potatoes. Don't over do it, or you will end up with roasted mash!

Cover a baking tray large enough for the potatoes in cooking foil and lightly spray with Fry Light.

Gently place the potatoes on the baking tray with plenty of space between each. Use a second tray if you need to.

Spray all potatoes lightly and evenly with Fry Light.

Add baking tray to oven and roast at 180°C for 45 minutes.

Serve immediately - roast potatoes are best fresh from the oven and don't react well to being kept warm (like a hot plate) for long.
