Ingredients

Serves 3 servings
  1. 1 piecepork head with ear (about 1 3/4 lbs or 800 grams)
  2. 1/4 bunchfresh cilantro
  3. 1jalapeño pepper
  4. 1/2onion
  5. 4 clovesgarlic
  6. 5whole allspice berries
  7. Salt
  8. 3/4 cupwater (180 ml)
  9. 4bay leaves
  10. Banana leaf (enough to wrap the meat), washed and softened on a griddle or skillet over low heat
  11. Aluminum foil

    Pour the water into a blender. Add the cilantro, onion, jalapeño, garlic, allspice, and salt. Blend until smooth and set aside.

    Line the bottom of the slow cooker with a layer of aluminum foil, then place the banana leaf on top. Season the pork with salt and place it on the banana leaf. Pour the blended mixture over and around the meat, then add the bay leaves.

    Cover the meat with the banana leaf and wrap everything with aluminum foil.

    Cover the slow cooker and cook on low for 8 hours.

    After cooking, remove the meat, discard the bones, and chop the meat on a cutting board.

    Assemble the tacos.

    Top with salsa verde.
