Warning: This recipe is highly addictive!Inspired by the idea of "breakfast bowls", I made this so I could cook it in bulk and reheat it for the week. They reheat well. It's great by itself or as a filler for meal prepping breakfast burritos.Reheat instructions:1. Place 1 serving on a plate2. Cover with a paper plate face down to trap in steam and prevent splatter3. Microwave 30 seconds4. Flatten with a fork to allow it to cook evenly5. Microwave 30 seconds6. Enjoy

Having dietary restrictions can be challenging but I sure do not miss dairy.. Of course you could add what ever you want to this to suit your tastes!! This is what I want for breakfast!! It is super yummy and satisfying!

Wife needed something easy and to eat on the go on way to work that wasn't messy.

I never seems to find time to sit down and have breakfast in the morning so this is something that I can have while I drive to work, that way I don't feel like I'm wasting time and yeah don't miss breakfast.

I'm a pescatarian, so I used soy bacon, mushrooms, and red pepper this time. You can use any products that sound like a good combination to you.

Easy crowd pleaser for simple mornings where you want to enjoy company more than you want to cook all morning in the kitchen. Serve with hot sauce.
