In a large stock pot, add bacon to heated olive oil and butter.

While waiting for bacon to get slightly crisp. Roast Bell Peppers in oven on broil. I lightly coated them in olive oil to keep them moist.

Remove bacon. And place to side for later. Add onion to same pot. Don't remove bacon grease. This will add a depth of flavor. Saute until translucent.

Add ground beef to onions and brown.

Add all spices. Cumin, oregano, chili powder, garlic, smoked paprika, cayenne pepper, salt & pepper. Stir.

After letting it cook for a 2 or 3 minutes. Add the dark beer. Work the bottom of the pan with a wooden spoon. Get all that flavor off the bottom. Believe me you want to do this.

Let the beer cook out. When there is only a little bit left. Salt and pepper again.

Add beans, tomato sauce, and diced tomatoes, roasted(chopped) peppers. Add bacon back in.

Let simmer for 30 minutes.

I grated sharp cheddar cheese. And topped my bowl with sour cream, cheese, chopped scallions, and oyster crackers.
