My husband needs to go on a very low carb diet. He chose Atkins. Now I am learning to cook a little differently. This was a great substitute for a normal pasta/potato side. Very easy, quick and tasty.

Ingredients

2 servings
  1. 2 zucchini
  2. 1Salt and Pepper
  3. 2 tspolive oil
  4. 1 tbspbutter
  5. 2clove crushed garlic
  6. 2 tbspgrated parmesan cheese

Cooking Instructions

    Julienne zucchini (don't remove skin) Salt and pepper to taste.

    In a fry pan, heat olive oil and butter.Sauté garlic for 30 sec.

  3. 3

    Add seasoned julienned zucchini. Stir and cook on med/high for 3-5 min. Just until Al dentè.

  4. 4

    Remove from heat and stir in parmesan.

  5. 5

    This is 2 servings but you can double it if needed.

I've made this before, and you're right it's just as good as pasta made with semolina flour-thanks for the reminder!
