Warm Latin Style Chipotle Potato Salad

Another recipe for bold flavor lovers. Spicy but cooled by the sour cream and avocados. Excellent side dish with pork or chicken. Enjoy this different style potato salad.

Ingredients

  1. potato salad
  2. 4 largerusset potatoes
  3. 1 canchipotle peppers in sauce, 7.5 ounce can
  4. 3scallions
  5. 1lime, juice and zest
  6. 1/3 cupsour cream
  7. 1/3 cupfresh cilantro
  8. 1avocado, diced
  9. 1/4 tspsalt
  10. 1/2 tspsmoked spanish paprika

Cooking Instructions

    Cook potatoes until tender. I microwaved them at two- three minutes per potato. You may bake them at 425°F. for 45 minutes or boil them till tender.

    In a bowl, empty can of chipotle peppers in sauce. Cut peppers into bite sized pieces.

    Slice scallions thin, add.

  4. 4

    Zest then juice the lime. Add to bowl.

  5. 5

    Add in all other ingredients. Mix together.

    Pour over warm potatoes that have been sliced into large chunks.

  7. 7

    Mix well and serve.
