I love loaded baked potato soup, and I came across this recipe and now I am in heaven. Absolutely comforting and easy to make.

I love loaded baked potato soup, and I came across this recipe and now I am in heaven. Absolutely comforting and easy to make.
Steps

Cut potatoes into 1 inch chunks and boil until almost tender. They will finish cooking in oven.

Drain potatoes and preheat oven to 350°F

Grease 3 quart casserole dish

In large bowl , mix potatoes. milk, salt pepper, sour cream and cream with electric mixer. ( you can also leave potatoes chunky and just cream the other ingredients if you like )

Stir in 1and 1/2 cups of cheddar cheese and half of the bacon.

Spoon mixture into casserole dish.

Bake for 20 to 30 minutes or until thoroughly heated and potatoes are tender.

Top with additional cheese, bacon and onions.

Cook 3 minutes or until cheese in bubbly and starting to slightly brown.

Great make ahead meal. Before cooking or after.
