Ingredients

8 servings
  • 3/4 cupgrits
  • 3 cupboiling water
  • 6 tbsp(3/4 stick) butter
  • 2eggs, beaten
  • 1 tspsalt
  • 1/2 lbsharp cheddar cheese, finely grated
  • 1 pinchcayenne
  • 1/2 clovechopped garlic
  • 1 ozmild green chiles, chopped (canned)
  • 1 lbof your favorite sausage
  • 1paprika to taste

Steps

  1. 1

    Preheat oven to 350°F.

  2. 2

    Cook grits in boiling water in a saucepan about 8 minutes all together. (To keep from spattering, reduce heat and simmer after 2 minutes.)

    In another pan, cook sliced or chopped sausage with garlic .

  4. 4

    Add butter, cheese, eggs, salt, cayenne, and chiles to grits.

  5. 5

    Add sausage mix to grits.

  6. 6

    Mix until well blended.

  7. 7

    Pour into a 9 X 13 inch pan or casserole dish.

  8. 8

    Sprinkle paprika on top.

  9. 9

    Bake uncovered 1 1/4 hours until crispy top forms.

Some of my favorite things are family, friends, my pets, cooking, baking, football (Badger & Packer), Brewer baseball, college basketball, car racing, thrift stores, volunteering, and rummage sales. I have a 9 year old rescue dog, and 7 birds ( 6 are rescue) and they range in age from 1 year to over 19 years old. I volunteer for a dog rescue and a shelter, as well as other festivals and organizations.
