My wife did a research paper on the benefits of spinach and we cooked this as an example of how to use spinach for people who don't like the typical way of steaming or boiling it. We loved it and cook it often now.

Ingredients

  1. 2 cupwashed chopped spinach (an 8-12 ounce package of fresh spinach works)
  2. 1 clovegarlic (or 2 if you like garlic)
  3. 3 tbsppines nuts
  4. 1/3 cupfresh basil
  5. 1/4 cupolive oil
  6. 1/4 cangrated parmesan cheese
  7. 1 pinchsalt

Cooking Instructions

  1. 1

    Chop spinach, and garlic slightly to help with mixing

  2. 2

    Place a small handful of spinach, pine nuts, oil, garlic, and basil in blender or food processor.

    Cover and puree until leaves look bruised

  4. 4

    Keep adding small handfuls of spinach until all is in, using a rubber spatula to help combine mixture.

    Add Parmesan cheese and salt then cover and blend until smooth.

  6. 6

    Add to your cooked pasta and enjoy!
