Kourou Dough with Olive Oil - Cheese Pies

Kourou dough is more or less the same everywhere. Some use margarine, others sunflower oil, some use milk, others yogurt, and so on. I don't prefer sunflower oils and margarines, and I always, always replace them with extra virgin olive oil that we have from Crete. Also, I don't like strained cow's milk yogurts; I prefer those with the skin on top... You might call it peculiar... maybe! Let me show you how I make kourou dough. In this case, I made cheese pies, but it can be used anywhere you need kourou dough.
Cost is relatively moderate. Quite an easy recipe even for beginners!
Dough preparation time: 15 minutes
Cheese pie preparation time: 1 hour
Baking time: About 25 minutes for small cheese pies

In the mixer bowl, add the flour, baking powder, yogurt, olive oil, egg, and salt, and knead (with the hook) until you have a uniform dough. (If you don't have a mixer, knead by hand).

In a deep bowl, crumble the feta and anthotyro cheese, add the egg and the chopped mint, and mix well.

Roll out the dough into sheets and cut with a cookie cutter (if you want a uniform result). Alternatively, take small amounts of dough in your hands, about the size of a walnut, and roll it into a small sheet.

Place a little filling on each piece of dough and fold to create a half-moon shape.

Press the edges with a fork to prevent them from opening during baking.

Arrange on a baking sheet and brush with the extra egg, which you beat with a little water.

Bake in a preheated oven at 350°F (180°C) for 20-25 minutes or until they turn a nice golden color.

With the same dough, you can make sausage rolls and ham and cheese pies.

You can easily freeze them before baking and have ready-to-bake cheese pies. From the freezer to the oven for sudden cravings.
