Ingredients

4 servings
  1. 2 mediumbeets
  2. 1/4 headred cabbage
  3. 2 tbspvegetable oil
  4. 1 1/2 tspcaraway seeds
  5. 2 tbspcider vinegar
  6. 1salt to taste
  7. 1pepper to taste
  8. 2 tbspfresh parsley leaves

Steps

  1. 1

    Peel beets and grate on a box grater into a bowl.

  2. 2

    Shred cabbage and add to the beets.

  3. 3

    Heat vegetable oil in a skillet until hot.

  4. 4

    Add caraway seeds and toast until fragrant, about 1 minute.

  5. 5

    Toss the vegetables with the caraway oil and cider vinegar.

  6. 6

    Season with salt and pepper.

  7. 7

    Sprinkle with parsley leaves.

Some of my favorite things are family, friends, my pets, cooking, baking, football (Badger & Packer), Brewer baseball, college basketball, car racing, thrift stores, volunteering, and rummage sales. I have a 9 year old rescue dog, and 7 birds ( 6 are rescue) and they range in age from 1 year to over 19 years old. I volunteer for a dog rescue and a shelter, as well as other festivals and organizations.
