Ingredients

4 servings
  • 2 tbspextra virgin olive oil
  • 1salt to taste
  • 1pepper to taste
  • 1 tsppoultry seasoning
  • 2to 3 sprigs of fresh rosemary, leaves removed and finely chopped
  • 1/3 cuporange marmalade
  • 1/4 cupbalsamic vinegar
  • 1/2 cupchicken stock
  • 2scallions, white and green parts, finely chopped
  • 2 lbboneless skinless chicken, thighs or breasts or a combo of both

    In a large skillet, heat the olive oil over medium high to high heat.

  3. 3

    Season the chicken with salt, pepper, and poultry seasoning.

  4. 4

    Add the chicken to the pan when the oil ripples and brown for 5 minutes.

  5. 5

    Turn the chicken and season with the rosemary.

  6. 6

    Cook for 5 minutes more.

  7. 7

    Stir together the vinegar, marmalade, and stock and pour over the chicken.

  8. 8

    Let the sauce thicken slightly, 2 to 3 minutes, until it reaches a thin glaze consistency.

    Add the scallions during the last minute of cooking time.

Some of my favorite things are family, friends, my pets, cooking, baking, football (Badger & Packer), Brewer baseball, college basketball, car racing, thrift stores, volunteering, and rummage sales. I have a 9 year old rescue dog, and 7 birds ( 6 are rescue) and they range in age from 1 year to over 19 years old. I volunteer for a dog rescue and a shelter, as well as other festivals and organizations.
