  1. 2 cupArugula
  2. 1/2 cupChickpeas
  3. 1 cupRed Beets
  4. 1 cupAvocado (optional)
  5. 1 tbspBalsamic Vinegar
  6. 1 tbspOlive Oil
  7. 1 dashSalt

  1. 1

    If using dry chickpeas, you will need to cook it: 35 minutes in the pressure cooker or 12 hours in water + boil for 20 minutes ). Refrigerate.

  2. 2

    Same thing for the red beets, if raw, cook it ahead.

  3. 3

    Cut the red beets and the avocado into small cubes

  4. 4

    Put washed arugula in a bowl (or directly in a plate), add the chickpeas, red beets and avocado.

  5. 5

    Season with olive oil, balsamic vinegar and salt.

I love fresh cooked red, yellow and purple beets. Adding it to arugala and chickpeas is an excellent idea!!!
