Perfect for parties. Makes about 2 cups. Place by the bar area.
Cooking Instructions

Bake livers for 30 min. at 350° covered.

Place butter in 4 cup glass measure. Add onion & garlic. Microwave 2 mins., let stand 1 min., microwave 2 more minutes.

Pour butter mix into food processor. Puree until smooth, about 30 secs.
- 4
Add cut up eggs, s&p, and cooked livers.
- 5
Puree until smooth about 1 min. Will be slightly grainy.

Pour into mold or container. Refriderate overnite.
- 7
Serve with pitas and crackers.

This was one of my Dad's signature dishes when I was growing up (1950s-60s). Didn't have food processors back then; he used his heavy cast iron meat grinder that clamped onto the table. People raved about Dad's "chopped chicken liver spread," especially my siblings. I was never a liver eater, other than braunschweiger sandwiches, so it was a hard pass for me. I got my hands on some grass fed bison at my local farmers market (by Owl Creek Bison) and the liver was highly recommended. I wanted to do some special with it so I turned into an delicious pâté based on one of my friend's chicken pâté recipes! Great with bread, crackers, etc. You might try mixing in some dried figs or garnishing with pink peppercorns as well. Felice
