Taisen's semi Italian pasta salad

I have seen a lot of different Italian pasta salads, so I decided to try and do one but I couldn't find the one that I wanted to try, so I ended up just buying stuff that I wanted in it. Nobody in my household would try it besides myself and my youngest daughter. She loved this so much that she kept asking for more. The only thing that she picked out of it was the tomatoes. I will definitely do this again, but I think that I might make a few changes just to make it different. The ham for instance, didn't really go with because I had gotten honey ham. I think regular ham would be better.

Ingredients

  1. 1 canblack pitted olives sliced or leave whole
  2. 3-4vine tipe tomatoes sliced into bite size pieces (you can use any kind of tomato)
  3. 1 packagesmozzarella cheese, cut into small cubes or however you like (I buy the round one from Aldi's)
  4. 1/2-1 blockmozzarella cheese, cubed
  5. 1 packagessliced pepperoni (cut into fours, I cut them in half and then half again)
  6. 1large cucumber (cut into fours or whichever size you want)
  7. 1 boxany kind of pasta noodles
  8. 1medium or small onion, diced (sweet or red, your choice)
  9. 1 packagesregular ham, honey ham or any other ham cut into bite size pieces
  10. 1 bottleItalian dressing (you can use regular or zesty)

Steps

  1. 1

    Boil your pasta noodles until done. Remove from heat, drain and let cool. You don't have to use the entire box. I didn't. I used maybe half or a bit over half.

    While the noodles cool, start prepping the rest of the ingredients.

  3. 3

    Open and drain black olives. Slice them length wise, in half or leave whole. Your choice.

  4. 4

    Rinse off the tomatoes, and slice into bite size or you can use grape tomatoes.

  5. 5

    Rinse, peel and slice your cucumber into bite size pieces.

  6. 6

    Slice up your block of mozzarella cheese into small bite sizes. Slice your soft round mozzarella into thin slices or however you like.

    Take your ham and chop it up into pieces or into long thin lengths. I used deli ham.

  8. 8

    Chop up your onion if using onion.

  9. 9

    For the pepperoni, you can leave them sliced as is or cut up. I cut mine into fours.

    When the noodles are cool, add some of the Italian dressing. Mix. Start adding in everything that you chopped and sliced. Mix well. You don't have to use the entire bottle.

    Cover with plastic wrap and set in the fridge for at least an hour. Enjoy ;)

I was a stay home mother for years, and loved it. I'm always interested in trying new things and try to get my kids to try things at least once. I don't measure a lot of things. I go by taste and need to work on that .... I use a lot of different recipes, enjoy looking at ones online and trying them . I tend to change things to so you never know. I haven't been able to cook much for a bit , but I'm hoping to change that soon.
