Put oil in a clean sufuria and add the onion.

Once cooked to golden brown, add the tomatoes and pepper. Stir and cover for 1 minute to cook.

Add the potatoes and salt, stir and cover with a lid for 1 minute.

Add the ndengu, stir and cover for 30 seconds.

Add 4 cups of hot water.

Wash the rice and add.

Cover and allow to cook.

Once all the water evaporates, rice is cooked and ready to serve.
